SAUSAGE - PEACH PANCAKE BAKE &
SYRUP
 
3 c. pancake mix
1 (16 oz.) can peach slices
1 (8 oz.) pkg. brown & serve sausage links

SYRUP:

1/2 c. sugar
2 tbsp. cornstarch
1/2 c. peach juice
1 tbsp. butter
3/4 c. maple syrup

Preheat pancake mix according to directions except use 1 1/2 cups liquid in place of amount called for. Turn into 9 x 13 inch pan. Halve sausage links crosswise. Arrange links and peaches alternately on top of pancake mix. Bake at 350 degrees for 30 minutes.

Syrup: Combine sugar and cornstarch in pan. Add peach juice. Cook and stir until thick and bubbly. Stir in syrup and butter. Serve with slices of pancake. Serves 10-12.

This was yummy, but heavy for an oven pancake. The syrup was great. I had to cook it for 40 minutes, the edges were crisp, but the middle was still slightly underdone. However, the sausages I used were not completely thawed.
