STIR-FRIED CHICKEN & VEGETABLES 
6 tbsp. oil
1 clove garlic, crushed
2 green onions, sliced
1 carrot, diagonally sliced
1 stalk celery, diagonally sliced
1/2 pkg. frozen snow peas
1 1/2 lbs. chicken breast, cut in 1/2-inch cubes
Slivered almonds
Butter
Soy sauce
Salt
Sugar

Brown almonds in butter. Heat 3 tablespoons oil in wok. Cook garlic, onions, carrot and celery until crisp-tender. Run hot water over frozen snow peas to separate. Add to vegetables and cook quickly. Remove from wok. Heat remaining 3 tablespoons oil. Add chicken, stirring to cook until meat turns white. Add vegetable mixture, almonds and soy sauce. Sprinkle with salt and small amount o sugar. Serve over rice. Makes 4 servings.
