CHICKEN WITH CREAMY GARLIC DRESSING | |
4 (4 oz) boneless, skinless chicken breasts 1 tsp. olive oil salt and pepper, to taste DRESSING: 1 cup low-fat sour cream 1 tsp. oregano 1/4 tsp. black pepper 1 tbsp. lemon juice 1 tsp. minced garlic 2 cups seasoned bread crumbs paprika 2 tbsp. 1 % milk Preheat oven to 350°F. Lightly coat chicken with olive oil and season with salt & pepper. In a bowl, mix together the sour cream, oregano, salt, pepper, lemon juice, and garlic. Reserve 1/2 cup for dressing. Use the remaining blend to coat chicken. Coat the chicken in sour cream blend, carefully dip in the bread crumbs to coat. Spray a large baking pan with cooking spray. Put chicken on pan. Lightly spray top of chicken with cooking spray. Sprinkle with paprika. Bake for 25 minutes, or until chicken is cooked all the way through. Whisk 2 tbsp. milk into reserved sour cream blend to make dressing creamy. Serve chicken with a dollop of dressing on top of chicken. Submitted by: Sherry Monfils |
