MINTED ORANGE CARROTS 
12 med. sized carrots
1 1/4 c. orange juice
2 tsp. arrowroot or cornstarch
1/4 c. honey
1/4 tsp. nutmeg
Pinch of powdered cloves
1 tsp. dried mint

1. Slice carrots into 1/4" rounds. Combine the carrots and orange juice in a saucepan. Cook, covered over medium heat until carrots are almost tender. Dissolve arrowroot in a little water. Add to saucepan and cook a few more minutes until juice thickens.

2. Preheat oven to 350 degrees.

3. Add honey, nutmeg, cloves and mint to carrots in saucepan. Transfer mixture to an ungreased baking dish. Bake in preheated 350 degree oven for 15 minutes. Serve immediately. 4 servings.
