CHICKEN A LA ORANGE WITH MINT | |
1 (3 lb.) chicken, cut up 2 oranges 1/2 c. flour 1 1/2 tsp. salt 1/2 tsp. paprika 1/4 c. oil 1 c. chicken broth 3 sprigs fresh mint Sliced fresh oranges for garnish Grate rind of 1 orange and squeeze the juice from that orange over chicken pieces. Thinly slice the second orange and set aside. Mix flour, salt, and paprika. Roll chicken pieces in flour mixture. Heat oil in heavy skillet. Brown chicken on both sides in the oil. Remove to a 13 x 9 inch baking pan or similar sized dish, allowing space between chicken pieces. Sprinkle chicken with grated orange rind. Pour broth around chicken in pan. Top with sliced orange and mint sprigs. Bake, uncovered, at 375 degrees for minutes or until chicken is tender. |
