TOMATO CUCUMBER SALAD 
2 med. tomatoes, sliced
1 med. cucumber, peeled & thinly sliced
1/2 med. onion, thinly sliced, separated into rings
1/2 c. salad oil
1/4 c. white wine vinegar
1 tsp. salt
1 tsp. dried basil leaves, crushed
1 tsp. tarragon leaves, crushed
1/8 tsp. pepper
Shredded lettuce

Layer tomatoes, cucumber and onion in a shallow glass dish. Mix oil with the vinegar, salt, basil, tarragon and pepper. Beat oil mixture with rotary or electric beater. Pour over vegetables. Chill, covered for 5-6 hours. Before serving, drain vegetables, reserving marinade. Arrange vegetables on lettuce. Pass the reserved marinade. Serves 6.
