CUCUMBER SAUCE FOR SEAFOOD 
1/2 c. coarsely chopped cucumber
2 tsp. lemon (or lime) juice
4 tbsp. plain low-fat yogurt
2 tbsp. low-fat (imitation) mayonnaise
1 tsp. prepared mustard
2 tsp. grated onion (or 1/2 tsp. dried onion flakes)
1 tbsp. minced fresh parsley, dill or mint leaves
Salt & pepper to taste

Chop cucumber coarsely without peeling (unless it is wax-coated). Drain in a colander about 30 minutes, then squeeze out moisture. Combine lemon juice, yogurt, mayonnaise, mustard, onion and parsley in a small bowl. Taste; add salt and pepper, if needed. Cover chill until serving.
