SEAFOOD IN CHEESE SAUCE | |
1 lb. cooked shrimp 1 lb. crab meat 1/2 c. butter 1/2 c. all purpose flour 4 c. milk 1 1/2 tsp. salt 1 (6 oz.) can sliced mushrooms, drained 1 tbsp. celery flakes 1 1/2 tsp. chopped green peppers 1/3 c. green onion, chopped 1/2 c. black olives, chopped (optional) 1 1/2 tsp. chopped pimento 4 c. grated sharp Cheddar cheese Melt butter, stir in the flour. Off the heat add the milk and stir to make smooth mixture. Return to heat and cook until smooth and thickened. Add all ingredients except one cup of cheese. Cook over very low heat until cheese is melted. Turn into greased large, shallow casserole and sprinkle top with remaining cheese. Refrigerate if desired until serving time. Bake at 350 degrees for 25 to 30 minutes until heated through. Serve over cooked rice. Serves 12 to 14. |
