SPICY BLACK BEAN SOUP | |
4 (29 oz. ea.) cans black beans, undrained 1 (50 oz.) can chicken broth (Swanson) 4 to 6 pickled yellow chili peppers, minced (Chile Gueritos) 1 large brown onion, chopped 2 cloves garlic, minced 2 tsp. oil 1 1/2 tbsp. salt 1 1/2 tbsp. pepper In a large pot add 2 teaspoons of oil and heat up. Add onions, salt, pepper and garlic. Sauté until onions are translucent and garlic has strong scent. Add black beans including liquid and add yellow chilies. Cook for ten minutes. Add entire can of chicken stock and cook for ten more minutes on medium heat. Adjust salt and pepper, to taste. Enjoy! Submitted by: Big Larry |
