EGGS OMELETTE 
1/4 c. chopped bell pepper
1/4 c. chopped green onions
6 eggs, slightly beaten
Salt and pepper to taste
2 tbsp. butter
1/4 c. chopped mushrooms
3 slices cheese, diced
1/4 c. evaporated milk

Melt butter on low heat; add pepper, onions, and mushrooms. Cook until tender. Combine eggs, milk, salt, and pepper together; add to pepper mixture. Cook in frying pan until almost done. Add cheese; continue to cook until eggs are done. Serves 2-3.
