PECAN PRALINES 
1 c. brown sugar
1 c. granulated sugar
2 tbsp. light corn syrup
1/3 stick butter
pinch of salt
2 c. coarsely chopped pecans
1/3 c. boiling water
1 tsp. vanilla

In a medium saucepan, combine brown sugar, granulated sugar, syrup, butter and salt. Add boiling water. Place over heat immediately. When mixture begins to boil, reduce heat to medium and cook for 6 minutes. Remove from heat and add vanilla and chopped pecans. Beat until slightly thick. Drop from tablespoon onto waxed paper.

If mixture becomes too hard to spoon out, return to low heat and add a small amount of light cream.
