TUSCAN BREAD | |
1 pkg. dry yeast 2 c. lukewarm water 4 c. unbleached white flour 1/2 c. whole wheat flour 1/2 tsp. sugar Pinch of salt Dissolve the yeast in the lukewarm water. Allow to sit for 3 minutes. Put both flours in a bowl, and mix in the sugar and salt. Stir in the water and yeast mixture and mix thoroughly. Knead for about 10 minutes, until dough is soft and elastic. (This step can also be done with a food processor, kneading until dough forms a mass.) Shape the dough into a round loaf. Dust a baking sheet with a little flour and place the rounded dough in it. Flour the top of the dough lightly. Cover with a cloth and let it rise in a warm place for 1 hour. Meanwhile, preheat the oven to 425 degree oven. Bake at 425 degrees for the first 10 minutes, then at 400 degrees for 20-25 minutes longer, or until the bread sounds hollow when tapped on the bottom. Yields 1 loaf. |
