PUMPKIN BREAD 
3 c. sugar
1 c. oil
4 eggs
2 c. pumpkin
1 c. pecans
1 c. water
3 1/2 c. self-rising flour
1 tsp. pumpkin pie spice
1 tsp. vanilla
1 tsp. cinnamon
1/2 tsp. ginger

Beat eggs; add oil and sugar; beat. Add water and pumpkin. Beat. Add spices and flour; mix. Add nuts. Pour 1/2 full into 4 coffee cans, greased and flour pans. Bake 1 hour in 300 degree oven.
