SPICE CAKE 
1/2 c. butter
2 c. sugar
1 c. buttermilk
2 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
2 tsp. cloves
2 tsp. cocoa
3 eggs, well beaten
3 c. flour (plain)
1 lg. apple, grated

Add soda to buttermilk. Sift together flour, spices, and cocoa. Cream butter and sugar. Add eggs, then dry ingredients alternately with buttermilk mixture. Add grated apple. Mix all well. Bake in three 9 inch layers at 325 degrees until done.

FILLING FOR SPICE CAKE:

3 c. sugar
2 tbsp. flour
1 can crushed pineapple, drained
1 grated orange, rind and all

Cook together in double boiler until thick. Add 1 cup raisins, 1 or 2 cups chopped pecans; spread between layers, tops and sides, and top with coconut. Decorate with candied cherries and pecan halves.
