2 c. sugar or 1 c. sugar and 1 c. molasses 5-6 c. biscuit flour, enough to make a soft dough 1 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 tsp. nutmeg or ginger 1 c. buttermilk 1/2 c. shortening 3 eggs 1 tsp. vanilla 2 c. dried apples or apple butter Sift together dried ingredients except sugar and spices. Cream together sugar, eggs, buttermilk, shortening, vanilla, and spices. Gently combine creamed and dry ingredients using a fork. Batter will resemble biscuit dough. Set aside half. Grease and flour two 9-inch cake pans. Divide other half a second time. Pat each half into cake pans. Bake in preheated 350 degree oven until golden brown. Layers will be thin. Divide remaining half and mold into pans. Bake. Spoon apple butter on top of each layer except last one. Flavor improves if let set a few days. Freezes well. |
