APPLESAUCE SPICE CAKE 
1/2 c. butter
2/3 c. sugar
2 eggs, lightly beaten
1/2 c. chopped nuts
1 c. chopped raisins
2 c. sifted flour
1 tsp. baking soda
1/2 tsp. nutmeg
1 tsp. cinnamon
1 c. unsweetened applesauce

Cream butter and sugar until fluffy. Add eggs and mix thoroughly. Add nuts and raisins. Sift dry ingredients together 3 times and add alternately with applesauce to creamed mixture, beating thoroughly after each addition. Pour into a greased loaf pan and bake in a moderate oven (350 degrees) for 1 hour. If baked in layers, bake only for 25 minutes. Makes 1 loaf (8 x 4 inches) or 2 (9 inch) layers. Can also be baked in a 9 x 13 inch cake pan for 25 minutes. Frost with cream cheese frosting.
