EASY ENCHILADAS | |
1 1/2 lbs. lean ground beef 1 pkg. flour tortillas 1 pkg. taco seasoning 1 can nacho cheese soup 1 can refried beans 4 oz. sliced or chopped black olives 8 oz. sour cream 1 can cream of mushroom soup 4 oz. chopped green chilies 8 oz. sharp shredded Cheddar cheese Brown ground beef and drain fat. Mix in taco seasoning and 1/4 cup water and simmer for 5 minutes. Scoop equal amounts of hamburger mixture, nacho cheese soup (from the can), refried beans (from the can), olives (from the can) into flour tortillas. Roll and place seam side down in a 13 x 9 inch pan. Mix sour cream, mushroom soup and green chilies together and pour over enchiladas. Place in 350 degree oven and bake until hot (about 25 minutes). Remove and spread cheese evenly over all. Replace in oven until cheese is melted. Kids like to help with this one! |
