EASY ENCHILADAS 
Oven at 350 degrees. Use a 13 x 9 x 2 inch pan. Serves 4-6.

10 (12 inch) flour tortillas
1 lb. ground beef
2 cans enchilada sauce (available in most grocery stores)
1 lb. Cheddar cheese, shredded
1 sm. onion, diced (optional)

Brown and drain ground beef, add 1/4 cup of enchilada sauce to beef. If onion is desired, add it at this time. Set aside.

In 13 x 9 x 2 inch pan, pour 1/4 cup enchilada sauce to lightly cover bottom.

Place approximately 2 tablespoons of beef mixture on tortilla, sprinkle with cheese. Roll tortilla and place in pan, seam side down. Repeat this with remaining tortillas.

When pan is full, pour remaining enchilada sauce over the top of tortillas and sprinkle remaining cheese on top. Place in 350 degree oven for approximately 15 minutes or until cheese melts. Serve with shredded lettuce and sour cream.
