BROCCOLI - CHEESE CASSEROLE 
2 tbsp. butter, melted
2 tbsp. flour
1/4 tsp. salt
1 (3 oz.) pkg. cream cheese, softened
1 oz. blue cheese, crumbled (1/4 c.)
1 c. milk
1/3 c. finely crushed Ritz crackers (about 10)

In saucepan blend together butter, flour, salt and cheeses. Add milk all at once; cook and stir until mixture boils. Stir in broccoli. Turn into 1 quart casserole. Top with crumbs. Bake at 350 degrees for 30 minutes. Makes 6-8 servings. Fresh broccoli is recommended.
