THREE WAY BANANA OATMEAL COOKIES 
2 c. flour
1 tsp. cinnamon
1/4 tsp. nutmeg
1 1/2 tsp. salt
1 tsp. baking powder
1/4 tsp. baking soda
1 c. sugar
1 c. soft shortening or butter
1 c. mashed bananas (2 or 3)
2 eggs
2 c. uncooked oats
1 c. chocolate chips or 1 c. raisins (opt.)

Beat sugar, shortening, mashed bananas and eggs until smooth. Beat in flour, spices, salt, baking powder, soda into the sugar mixture. Fold in rolled oats and chocolate chips or raisins. You may divide the dough into 3 parts.

Bar Cookies: Spread 1/3 of dough in a well greased 8" square pan. Bake at 375 degrees for 15 to 20 minutes. Let stand 10 minutes, then cut into bars and roll in confectioners' sugar (powdered) while still warm.

Drop Cookies: Drop into a well greased cookie sheet. Bake in 375 degree oven for 10 to 12 minutes.

Rolled Cookies: Refrigerate 1/3 of the dough overnight. Sprinkle board with powdered sugar. Roll dough to 1/4" thickness. Cut into 2" circles or fancy shapes. Bake 350 degrees for 8 to 10 minutes.

Kelzer's favorite are the drop cookies.

I halved the recipe and baked as bars in a small greased and base lined roasting pan. I used mixed spice instead of cinnamon and nutmeg. Smelled lovely while baking, and tastes delicious!
