SQUASH CASSEROLE 
1 lg. onion, chopped
3 c. yellow squash, cooked & mashed
Salt, pepper & Tabasco sauce to taste
2 sm. packs Sweet & Low or 1 tbsp. sugar
3 c. crushed saltines
4 eggs
2 c. grated cheddar cheese
3 c. milk
1 1/2 sticks butter, melted

Saute onions. Add to squash with salt, pepper, Tabasco, 2 cups crumbs, eggs, cheese, milk and 1 stick butter. Pour into casserole. Mix cracker crumbs with remaining butter. Bake at 350 degrees until mixture is set and crumbs are browned (about 1 hour).
