BELLE'S SQUASH CASSEROLE 
8 - 10 yellow squash, boiled in salted water until tender
1 onion, finely chopped
1 bell pepper, chopped
1/2 c. sweet milk
1/2 stick butter, melted
6-8 soda crackers, crumbled
2 eggs, beaten
1 tsp. sugar
1/2 c. grated cheddar cheese

Saute the onion and bell pepper in a little butter. Drain squash well and mash. Add 6 crumbled crackers. Mix eggs and milk with squash. Then add all other ingredients. Taste to see if it needs salt or pepper. Put in buttered casserole and top with cracker crumbs. Bake for 1 hour at 300 degrees. A low oven makes the casserole a lighter, more delicate affair.
