SQUASH CASSEROLE 
2 c. yellow squash
1 c. sweet milk (scalded)
1 c. soft bread crumbs
2 eggs beaten
8 oz. sharp cheese (grated)
1 med. onion, chopped
1/2 tbsp. baking powder
1 tube Ritz crackers
1/4 c. butter (melted)

Preheat oven to 350 degrees. Cook, drain, and mash squash. Combine milk, bread crumbs, and squash. Add beaten eggs, cheese, onion and baking powder. Pour into greased 9x9 baking dish. Cover with cracker crumbs mixed with melted butter. Bake about 40 minutes. Serves six.
