SQUASH CASSEROLE 
6 yellow med. squash
1 med. onion
2 eggs
1/2 c. sweet milk
1 1/4 sticks butter
35 Hi-Ho crackers
2 c. grated cheese
Salt and pepper to taste

Cook squash and onion. If you have much excess liquid, drain off. Mash squash. Add 1 cup cheese, eggs, 1/2 cup milk, half of cracker crumbs, and 1/2 stick butter, salt and pepper. Pour into baking dish and top with 1 cup grated cheese, cracker crumbs and 3/4 stick of butter. Bake 20 minutes at 300 degrees or until bubbling hot and golden brown.
