SQUASH CASSEROLE 
2 c. cooked yellow or zucchini squash
1 c. sweet milk (not skim)
3/4 c. grated Cheddar cheese (natural)
12 saltine crackers, crushed
1 sm. onion, chopped very fine
2 eggs, lightly beaten
Salt and pepper to taste
6 Cheddar cheese strips

Coarsely chop squash. Mix with other ingredients, except strips of cheese, and place in greased 1 1/2 to 2 quart casserole. Bake at 400 degrees until firm. Place cheese strips across the top and return to oven until melted. Serves 4 to 6 people.
