CHOPPED VEGETABLE SALAD 
1 cucumber, peeled and diced
4 tomatoes, diced
2 scallions, finely chopped
1/2 c. oil
1/3 c. vinegar
1/2 tsp. garlic
Salt and pepper to taste

Toss together cucumber, tomatoes, and scallions. In a cruet mix together oil, vinegar, garlic, salt and pepper. Shake well. Pour over vegetables. Chill briefly and serve. Serves 4-6.
