3 c. shortening 6 c. sugar 12 eggs 9 c. flour 2 tbsp. baking powder 6 tbsp. caraway seeds 3 tsp. vanilla 3 c. nuts, chopped 3 c. dates, chopped 1 1/2 c. mixed peels 1 c. candied cherries 1 1/2 tsp. salt Sift flour, salt, and baking powder, and cut in shortening like pie dough. Add sugar, caraway seeds, nuts, dates, cherries, and peels. Mix well. Add well- beaten eggs and vanilla. Mix until stiff like pie dough. Grease and line loaf pans with waxed paper. (I usually do not grease pans.) I bake loaves at 325 degrees for 1 hour. After this, I start checking every 10 minutes. Loaves should be lightly browned and be firm to touch. Oven temperatures vary, so watch out. Makes 4 large loaves. |
