WELSH CAKES | |
2 c. sifted unbleached flour 2 tsp. sifted baking powder Pinch of salt 2/3 c. sugar 2 oz. butter 2 oz. butter 1/2 c. currants 1 lg. egg beaten with 2 tbsp. milk Heat heavy frying pan or griddle, same temperature as for pan cake at 325 degrees. Blend flour, baking powder and salt. Blend in shortening until mixture looks like bread crumbs. Stir in sugar and currants. Moisten with egg and milk. Roll out on lightly floured board about 1/4 inch thick. Cut with 2 1/2 inch cookie cutter. Lightly grease griddle and fry until golden brown each side. Sprinkle with sugar while warm. Makes about 20 cakes. Store in airtight tin. |
