EASY RICE PUDDING 
1 c. minute rice
2 1/2 c. milk
1/4 c. sugar
1 tbsp. butter
1 tsp. vanilla
1/4 tsp. nutmeg
1/8 tsp. salt
1 egg yolk
2 tbsp. milk
Grated orange peel, optional

Combine rice, 2 1/2 cups milk, sugar, butter, vanilla, nutmeg and salt in saucepan. Bring to boil. Cook over low heat 20 minutes, stirring frequently.

Meanwhile, blend egg yolk and milk. Slowly add to rice mixture, stirring rapidly. If desired, stir in some grated orange peel.
