NEU'S EASY RICE PUDDING 
1 c. cooked rice
2 c. milk
1/3 c. sugar
1 tbsp. butter
1 tsp. vanilla extract
1/2 tsp. salt
Dash nutmeg

Preheat oven to 325 degrees. Grease a 1 quart baking dish; set aside.

In large bowl combine all ingredients. Pour into prepared dish. Bake 50 minutes. Serve warm or chilled. Makes 6 servings, about 175 calories each.
