EASY RICE PUDDING 
2 c. milk
1/2 c. light cream
1/8 tsp. salt
1/3 c. sugar (sugar substitute may be used)
1/2 c. uncooked rice
1 tsp. vanilla
2 tbsp. butter

In top of double boiler; heat milk; stir in rice. Cover and cook over boiling water, stirring occasionally as mixture thickens. Add additional milk if necessary, until rice is tender, about 1 hour.

Stir in cream, vanilla, salt, sugar, and butter. Remove from heat and allow to stand over hot water until ready to serve. Mixture will thicken as it stands. Serve with additional cream and a sprinkling of cinnamon, if desired.
