APPLESAUCE FRUIT CAKE | |
2 tbsp. cocoa 1 c. sugar 1/2 c. butter 2 c. flour 1 tsp. pumpkin pie spice or 1 1/2 tsp. cloves, nutmeg, and cinnamon 1 tsp. vanilla 1/4 tsp. lemon extract 1 1/2 c. applesauce 1 tsp. baking soda 1/2 c. raisins 1 1/4 c. mixed candied fruit (if you like lots of fruit you can use more) 1 c. chopped nuts Cream sugar and butter; add flavorings. Sift flour, measure then sift again with spices, baking powder and cocoa. Mix soda with applesauce, alternate applesauce and flour mixture into creamed sugar; add fruit and nuts a little at a time. Bake in loaf or tube pan about 50 minutes. Start oven at 350 degrees; lower to 325 degrees after cake raises. |
