FRUIT COCKTAIL CAKE OR
APPLESAUCE CAKE
 
1/2 c. shortening
1 c. sugar
2 eggs
1 3/4 c. flour
1 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 can drained fruit cocktail
1/2 c. walnuts (optional)

Stir shortening to soften; gradually add sugar. Add eggs; beat until light and fluffy. Stir dry ingredients (mixer). Add to creamed mixture alternately with fruit cocktail, beating each time. Stir in nuts.

Pour in paper lined pan (optional) 9 1/2 x 5 x 3 inch loaf pan. Bake at 350 degrees about 1 hour. Cool 10 minutes. While warm, top with sugar glaze: 1/2 cup powdered sugar and 1 tablespoon water.

For applesauce cake, omit fruit cocktail and add 1 cup applesauce.
