BROCCOLI CHEESE SOUP 
1/4 c. butter
1/4 c. flour
3 c. milk
10 oz. chopped broccoli
1/2 c. water
1 lb. Velveeta cheese, cut in chunks

Make white sauce from butter, flour, and milk. Cook broccoli in water until barely tender. Add broccoli, cooking water, and cheese to sauce. Stir to melt cheese. Season with black pepper if desired. Add more water if soup is too thick.
