BROCCOLI STROGANOFF | |
1 bunch broccoli, chopped coarsely (peel stalks first) 1 lg. onion, chopped 2 cloves garlic, finely chopped 1/4 lb. mushrooms, sliced 6 to 8 oz. reg. or low fat cream cheese Soy sauce Salt & pepper to taste Steam or cook broccoli in small amount of water until just tender. Drain and set aside. Saute mushrooms in 2 tablespoons butter until all liquid has evaporated. Set aside. Saute onions and garlic in butter until tender. Add cream cheese, 2 to 3 tablespoons soy sauce and stir until smooth and heated through. Fold in steamed broccoli and mushrooms. Serve over fettucini or other noodles. |
