BROCCOLI CHEESE SOUP 
4 tbsp. butter
2/3 c. chopped onions
4 tbsp. flour
3 c. milk
1 (10 oz.) pkg. chopped broccoli
4 thick slices Velveeta cheese
1 tsp. salt
Pepper & nutmeg to taste

Melt butter and saute onion. Add flour and stir well. Slowly add milk, broccoli and cheese. Season to taste. Cook until thickened.
