STUFFED BAKED POTATOES | |
4 large baking potatoes 1 lb. ground beef 1 large onion, diced 2 bell/green peppers, chopped 1 (8 oz.) can mushrooms or 1 c. fresh 2 c. grated Cheddar cheese 1 c. sour cream 1/2 c. milk garlic to taste salt and pepper Bake potatoes until done. Allow to cool. Cut lengthwise and scoop out soft center, keeping shell intact as much as possible. While potatoes are cooking, brown ground beef and add remaining ingredients except the cheese. Cream potatoes with milk, salt and pepper. Fill bottom of potato shell with creamed potatoes, about 1/4 full. Add ground beef mixture. Top with 2 tablespoons of sour cream and grated cheese. Broil in oven for 5 minutes or until cheese is melted. |
