CHEESE STUFFED BAKED POTATOES 
6 med. baking potatoes
1/2 c. milk
1 c. shredded Cheddar cheese
1/2 tsp. salt
1/4 c. butter
2 tbsp. chopped green onion
1/4 tsp. pepper

Bake potatoes and cool. Cut a slice from top of each potato, carefully scoop out inside, leaving skin intact. Mash potato pulp. Add butter, milk and beat until smooth; stir in onion, cheese, salt and pepper. Spoon into potato shells and bake at 350 degrees for 20 minutes. May freeze, thaw and heat.
