GRANDMA'S CHOCOLATE CHIP MERINGUE BARS | |
1 c. shortening (Crisco in a can) 1/2 c. brown sugar 1/2 c. white granulated sugar 2 egg yolks (save the whites) 1 tsp. baking soda 2 c. flour 1 tsp. vanilla 1/4 tsp. salt 1 c. brown sugar for meringue 6 oz. bag chocolate chips Heat oven to 375 degrees. Mix shortening, 1/2 cup brown sugar, vanilla, granulated sugar and egg yolks. Mix in baking soda, flour and salt. Mix together. Mixture may be crumbly. Press into greased 9"x12" pan. Sprinkle chocolate chips over mixture and press them in. Beat the 2 leftover egg whites until foamy, add the 1 cup of brown sugar, a tablespoon at a time. Continue beating until stiff and glossy. Spread over the mixture in the pan. Bake at 375 degrees for 25 minutes. Cut into squares when cool. |
