CAPTAIN JOHNS BBQ BASTING SAUCE | |
3 qts. water 1/2 pt. vinegar 2 sticks of butter 1 med. yellow onion, chopped 4 bay leaves or equivalent 2 garlic cloves, crushed 1 c. brown sugar 1/2 bottle liquid smoke Combine all ingredients in large covered pot. Bring to a boil and then simmer for 2 hours. Remove to useable container, taking out bay leaves. To prepare meat (beef or pork) : Sprinkle liberally with red and/or black pepper. Rub pepper into meat. Do NOT rub your eyes. Place peppered meat in sealed container and let stand, at least 1 hour, preferably overnight in refrigerator. To cook: Sear both sides over hot grill. Reduce heat to medium low and baste with sauce. Turn and baste about every hour until done. |
