BUD'S BASTING SAUCE FOR CHICKEN AND FISH | |
1 stick butter 2 to 3 tbsp. soy sauce 1 tbsp. Worcestershire sauce 2 tbsp. lemon juice Garlic powder to taste Black pepper Melt butter in microwave and add other ingredients. For chicken, salt and pepper chicken halves. Baste chicken pieces skin side up and put chicken on roasting pan. Bake at 350 uncovered about 1 hour and 15 minutes (for large chicken halves), turning chicken about 1/2 way through cooking time and basting then. Serve chicken with remaining sauce. For whole catfish, salt and pepper fish (sometimes Bud sprinkles Tony Chachers creole seasoning on there instead of salt and pepper - don't use too much if you use it, as it's hot). Bake fish at 3509 degrees about 20 minutes on each side. Baste with sauce when fish is turned over and serve with remainder of sauce. Cooking time will depend on the size of the fish. |
