“THAI CHICKEN WITH FRESH BASIL” IS IN:

THAI CHICKEN WITH FRESH BASIL 
3 tbsp. vegetable oil
1 lb. chicken breast, deboned
2 tbsp. garlic, coarsely chopped
3 tbsp. nuoc nam (fish sauce)
3/4 cup basil, thinly sliced
2 tbsp. sugar
2 serrano chilies
2 tbsp. water

Skin chicken and cut into 1.25x1-inch strips. Remove stems from chilies and cut lengthwise into thin strips (discard the seeds). Heat oil in wok or large skillet over high heat. Add garlic and stir until golden brown, about 10 seconds. Add 1/2 cup of basil and the chilies and stir-fry just until basil wilts, about 1 minute.

Add chicken and stir-fry about 3 minutes. Add nuoc mam, water and sugar and stir-fry until sauce bubbles and thickens slightly, about 2 minutes. Add remaining 1/4 cup of basil and stir-fry until just wilted, about 5 seconds.

Serve immediately with steamed rice.

This was really good and pretty simple. We only used one chili so it wasn't too spicy, but could have used 2.

It was soo good! I was wondering how the sauce would come about like the dish ordered in a restaurant but I didn't have to fear: the chicken juice fish sauce with the flavors joined beautifully. My husband helped himself to thirds o_O Now I don't know how to top last night's dinner!

Yummy! Friends had given us red jalapeņos so used those instead of Serrano chilies and was a really quick dish with lotsa heat. Will definitely make again.
