RED BEET CHOCOLATE CAKE 
1 1/2 c. sugar
3 eggs
1 c. oil
1 1/2 c. beets, sieved
2 sq. melted chocolate
1 3/4 c. flour
1 1/2 tsp. baking soda
1/4 tsp. salt
1/4 tsp. vanilla

Cook beets and sieve or blend. (Canned beets or two 4 1/2-ounce jars of beet baby food may be used.)

Combine sugar and eggs; add oil, beets and chocolate. Sift dry ingredients; add with vanilla to other ingredients. Bake in greased 9x13 pan at 350 degrees for 25 minutes.
