3 eggs
1 1/2 c. sugar
3/4 c. oil
1 1/2 c. cooked beets, crushed
1 3/4 c. flour
1 tsp. vanilla
1 1/2 tsp. baking soda
1/2 tsp. salt
2 oz. unsweetened chocolate squares melted

Beat eggs and sugar; add oil, beets and chocolate. Add sifted dry ingredients. Pour into greased and floured pan or pans. Heat oven to 350 degrees. Bake about 50 minutes.
