BEET CAKE 
3 eggs
2 c. sugar
1 1/4 c. oil
2 tsp. vanilla
16 oz. can either shredded or diced beets with liquid
1 1/2 c. crushed pineapple, drained
2 1/2 c. + 2 tbsp. flour
1 tsp. salt
1 tsp. baking powder
1 1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 c. flaked coconut
1 c. chopped nuts

Combine eggs, sugar, oil, vanilla; beat well. Stir in beets and liquid. Add pineapple. Add dry ingredients and beat for 2 minutes. Add nuts and coconut. Stir well. Pour into greased and floured 9 x 13 pan and bake for 1 hour at 350 degrees.
