BEET SPICE CAKE 
1 stick butter
1 1/4 c. sugar
2 eggs
1 (16 oz.) sweet and sour beets
2 1/4 c. sifted flour
1 1/2 tsp. cinnamon
1/4 tsp. cloves
1 tsp. baking soda
1 c. chopped walnuts
Box confectioners' sugar

Beat butter and sugar until smooth. Add eggs, beat well. Blend beets in blender until smooth. Add sifted dry ingredients with walnuts. Mix all together. Pour into greased and floured bundt pan. Bake at 350 degrees for 55 minutes. When cool sprinkle sifted confectioners' sugar over cake.
