SPICED BEET PICKLES 
2 c. sugar
2 c. water
2 c. vinegar
1 tsp. ground cloves
1 tsp. allspice
1 tbsp. cinnamon

Boil beets 15 minutes, peel and slice. Boil above ingredients for 10 minutes; pour over sliced beets in hot jars and seal.

This mixture sounds perfect! Am going to downsize it big time - and attempt to use this for pickled refrigerator vegetables... onions, cauliflower, broccoli, etc. This probably could be used for small portions of assorted vegetables (diced) and used as a relish.
