PICKLED BEETS 
Beets
1 tsp. pickle spice per jar
1 tsp. salt per jar
2 c. sugar
1 1/2 c. vinegar
1/2 c. water

Cook beets, skin and pack in jars. Add pickle spice and salt to each jar. Boil together sugar, vinegar and water. Pour over beets, leaving 1/2" headroom. Seal.
