FILLINGS FOR PIEROGI 
POTATO AND CREAM CHEESE FILLING:

3 cooked potatoes
1 (3 oz.) cream cheese
1 sm. onion
1/4 c. butter

Chop onion and saute in butter until lightly brown. Add salt and pepper to taste. Put potatoes through a sieve and cool. Add cream cheese, sauteed onion and butter, salt, and pepper. Mix with fork until well blended.

CHEESE FILLING:

1 c. cottage cheese
1 c. egg yolk
3 tbsp. sour cream
Salt and pepper

Cream cheese with egg yolk and salt and pepper. If too thick, add sour cream.
