POTATO CAKE 
Serves 10 or more.

3 lbs. all-purpose potatoes
Salt
1/4 lb. Mozzarella, cut into sm. pieces
1/4 lb. provolone, preferably sharp, cut into sm. pieces
3 oz. mortadella, chopped
3 oz. salami, preferably Neapolitan, chopped
1 1/2 c. freshly grated Parmesan
5 tbsp. butter
4 egg yolks
Pepper
Freshly grated nutmeg
Bread crumbs

Peel the potatoes, cut them in large pieces and boil them in salted water until soft. Drain and mash them to a puree. Mix well with all the cheese and salami, 5 tablespoons butter cut into bits, and the egg yolks, and season with salt, pepper and nutmeg.

Butter a deep baking dish or cake pan and dust with bread crumbs. Pour in the mixture, sprinkle the top with butter shavings and bread crumbs and bake at 350 degrees for about 30 minutes, or until golden. Unmold and serve hot.
